Baking with cottage cheese

I bought cottage cheese for a recipe and I don't really like it on its own. Do you have a suggestion for a cake, muffin, scone or bread with cottage cheese? Or, maybe an egg dish? Thank you!

I have lots of rhubarb and I am a fan of lemon as well. I also have a few mangoes on hand.

If you have an egg dish idea, I have lots of asparagus as well.

My mother often made something very similar to this noodle kugel. Absolutely delicious! She always used large curd cottage cheese to make it extra wonderful.

When my mother made dilly bread it was a treat. I make it when my cottage cheese approaches its use-by-date.

I whip mine in a food processor so it's smooth and fluffy and not curd-y, and add pumpkin puree, maple syrup, and pumpkin spice (or cinnamon) and it's so good. Or sometimes I blend in fresh mango. Just something to try that's easier than baking. Careful about blending it in a blender though, it can turn it to a liquid.

Per the lasagna comment above, you can use it interchangeably with ricotta in many recipes. When cooked, they have very similar textures.

This is probably out of bounds, but if you have honey on hand, try just dribbling honey over a small bowl of cottage cheese. Completely changes the experience.

You can blend the cottage cheese in a high-speed blender or food processor to end up with an ingredient that I would sub for yogurt in a recipe or use as a toast topping or sauce or smoothie. You may prefer this to the texture of your cottage cheese though if it is chalky and low-fat or fat-free, you still may not like the flavor so want to avoid having the cottage cheese be a prominent feature in the recipe.

You can also freeze cottage cheese to use in cooked/baked recipes later.

For your fruits, you want a clafouti with cottage cheese. These are very flexible. Here's an example: Cherry Clafouti . Note this recipe calls for frozen cherries, thawed and patted dry so your rhubarb or mango should be sauteed in some liquid until soft and then until close to dry. I'd definitely add lemon juice and zest.

I have a crustless quiche / frittata recipe that is based on Kitchn's frittata formula, very flexible and good. Here's a specific recipe example using this formula: Spinach Feta Frittata.

For your ingredients I would do the following.

Cook the asparagus to your preferred doneness (steam in a pan with some water for about 8m, for example).

Microwave a baked potato if you want.

In an oven-proof pan, saute some chopped onion in butter or oil, add the chopped asparagus and chopped potato. Lightly salt. Spread evenly. Aim for 2 cups of vegetables or more.

Sprinkle on a few ounces of cheese. Feta or goat cheese would be good. Aim for 1 cup of cheese or more, about 4 ounces. Optionally use cottage cheese for some or all of the cheese. Optionally sprinkle on some dried or fresh herbs - dill would be nice.

Blend or whisk 5 eggs with 1/2 cup of cottage cheese and 1/2 t salt. Blending results in smooth cottage cheese while whisking leaves the texture. Pour over cheese and veg mixture.

Bake 400 for 10-12 minutes or until the center is not liquid when tested with a knife. Do not overcook.

Optionally sprinkle on more herbs or some chopped tomatoes or salsa.

These cottage cheese muffins are oh so good and will use up an entire cup of cottage cheese. They freeze well too!

Big fan of savory cottage cheese! Drizzle olive oil and crack some pepper in it as a minimum, but you can also add chives, tarragon, chopped vegetables like cucumber, tomato, radish, etc.

On the sweet side, I serendipitously discovered that if you defrost frozen blueberries to the point of verging on hot and add them to cottage cheese with a little maple syrup, it gives about 85% of the experience of a blueberry blintz.

My favorite version of sous vide egg bites (which can also be made in an InstantPot) includes cottage cheese for bulk and creaminess, but it gets blended right in and you can't taste it.

Yum, syrniki, cottage cheese pancakes. We have these every weekend - 1/2 c oats, 2 eggs, 1/2 c cottage cheese, blend, cook in nonstick skillet in small pancakes. YUM. Serve with jam. I repeat, YUM.

I absolutely love these simple cottage cheese cookies from the fantastic Olia Hercules. They are perfect with tea-- rich, satisfying, not too sweet. I make mine with butter and a little vanilla extract, but they are amenable to many flavors.

Blintzes are one of my favorite things to make for brunch. Its basically crepes filled with sweetened, blended cottage cheese that are quickly fried in butter, and served with fruit compote, jam, or fresh fruit.
