Basic cookbook for a Pescatarian

I need to find a basic cookbook for a Pescatarian.

My BIL is a Pescatarian, and has expressed a desire for a cookbook for a newbie in fish cooking. I know he is not a newbie in eating fish, enjoys fish on a regular basis, and am sure he has basic cooking skills.

I thought of something like Eric Ripert, but that's obviously not new cooking skills.

Assume he is very intelligent, but wants to learn new cooking skills with fish.

I have not tried this, but Mark Birman is generally really good at simple explanations and recipes that taste more complicated than they are, and he has a fish book.

Best answer: Rick Stein, Keith Floyd (unless the BIL prefers to avoid alcohol), but primarily the pertinent sections in Julia Child and Elizabeth David

Seconding Bittman. It's a good starter, covers a lot of fish.
