Best book on how to cook with herbs and spices, and NO Salt?
My SO is great at cooking the Gershin way (ie without salt) but I'd like to get her a gift of a guide to using herbs and spices, and still not use salt, in order to get her dishes a little more tastey.. for a holiday gift...What are your suggestions?

Not a book, but Penzys Spices has a good collection of salt-free seasoning blends, which come with recipe cards. The catalogs also have lots of recipes.

I kept my old books and stopped using salt. Everything tastes fine. They were good books.

If she is trying to follow Gerson - then the "rules" do not allow for spices either. If she just doesn't want to use salt, Mr. Yuck has it. Regular cookbooks - just hold the salt. The only place this will be tricky is in baking. Some recipes rely on the chemistry of salt for things like rise.
