Wanted: Madhur Jaffrey's Ultimate Curry Bible

Do you have Madhur Jaffrey's Ultimate Curry Bible on your bookshelf? Could you flip through in search of a pork recipe with mustard seeds?

I'm hosting a small informal dinner tonight and was planning on making one of my favourite recipes from Madhur Jaffrey's Curry bible. Alas, I can't find my book and I need to start prepping!

The recipe was on the top of a left page and the title was in the vein of 'pork with mustard spices'. It entailed making your own spice mix with the usual suspects. Frying mustard seeds, adding pork strips, the spices, curry leaves and bean sprouts. Maybe some diced tomatoes were added, I'm not sure.

Could you find it for me?

As a last resort I will head to my library, but I'm hoping on a faster response here.

Pork in a Mustard Spice Mix

560g boneless pork
1 tbs fresh ginger
6 cloves garlic, crushed
1 1/4 tsp salt
1/4 tumeric
3 tbs oil
1/2 tsp mustard seeds
15-20 fresh curry leaves
5 tsp "my mustard spice mix"
255g tomatoes, peeled and chopped

rub the pork cubes with ginger, garlic, salt and tumeric. Cover and set aside.

Poil into pan on medium high. When the oil is hot add the mustard seeds, as soon as they pop, add the curry leaves, and one second later the pork + marinade.

stir for a minute. Cover, reduce heat to medium, and leat meat cook for next five minutes.

Add the mustard spice mix, and stir for a minute. Add the tomatoes and cook until the tomatoes turn pulpy, about two minutes.

Now add 250mls water, stir and bring to the boil. Cover, reduce the heat and cool gently for 50-60 minutes.

"My mustard spice mix": 2tsb whole coriander
1tsp whole cumin
1tsp fenugreek
1 tsp brown mustard
1 tsp balck peppercorns
2 whole dried chillies
5 whole cloves.
