What 80's movie is this quote from and what exactly is the right quote? Its something like "I've got a girlfriend, we met at Niagara Falls. You wouldn't know her."
It's from The Breakfast Club. Brian, the nerd says "She lives in Canada, met her at Niagara Falls. You wouldn't know her." (source)

That scene is also referenced in Weird Science when they're talking about making a girl:

The "girlfriend in/from Canada" quote is from BClub.
But when refenced, it's not necessarily a BClub reference.
It references the more general phenomenon of a fictional girlfriend/boyfriend for those who lie about not being virgins and can't produce a sex partner.
Summer Camp was often used before Canada:
Lori: You're such a virgin!
Lynn: Am not!
Lori: Oh yeah, who did you have sex with? When?
Lynn: um... it was last summer, with this boy at camp; you don't know him.

I think the Weird Science one is definitely a references since both men with imaginary girlfriends are played by the same actor.
