Best slow cooker chimken

That's the whole question! What are your favorite slow cooker chimken (chicken) recipes to delight our family? Any flavor profile, just needs to be yummy. Prefer ones that you've made and enjoyed. Thanks!
Thighs with skin on.
Sear in a pan and set aside for later.
Use the rendered chicken fat to soften or soffrito onions, celery (thinly sliced), carrors (small cubes), garlic.
Move everything to the soow cooker, cover with tinned tomatoes and enough water to keep everything moist.
Either after serving or before returnng to the pan, you can harvest the chicken skin to fry low-and-slow in a separate pan

I often put boneless skinless thighs in the slow cooker with enough salsa, or pasta sauce, or Indian simmer sauce, etc., to cover and cook for 6-8 hours on low or 3-4 hours on high. It's easy and always good over rice or pasta.

Personally, I'd start with a whole chicken and make the broth and so on. It saves money and is more delicious. But all the online recipes seem to use store-bought broth and chicken breast.

My favorite is Slow-Cooker Hot-Honey Chicken from NYT Cooking (gift link). The recipe is for sandwiches, but it's also great in a salad or as a topping for a baked sweet potato.

For many years a variation of this Slow Cooker Chicken Adobo has been one of our standby favorites.
Our changes to the recipe include:
Add:
- 1 yam cut into 1/2 inch rounds
- 1 cubed carrot
- 2 tablespoons brown sugar
- 1 bay leaf
- 2 cups water
Reduce soy sauce and cider vinegar to 1/3 cup each.
Try to get a quartered chicken that includes the giblets. They help the broth.
It is delicious, juicy, fall-apart chicken. My mouth is watering just thinking of it.

My family loves this slow cooker chicken and dumplings recipe. I prefer to make it with something bone-in, typically drumsticks or thighs for an especially flavorful broth.

This Rick Bayless recipe is great with boneless, skinless chicken thighs in place of pork. I make it a couple times a year.

If you use chicken thighs, make sure to skin them and brown them before adding them to the slow cooker.
I'm pretty sure you could adapt just about any tagine recipe to make in a slow cooker, although you may have to adjust volumes.

This slow-cooker tortilla soup is great. (I didn't make the tortilla crisps, but they'd be a nice addition, too.)

Chef John has a recipe for Pulled Chicken Sloppy Joes that we like. He makes it on the stove, but I see no reason not to use a slow cooker.
