Quest for THE Lemon Meringue Pie

I'm looking for the perfect Lemon Meringue Pie I once had

A while ago, I had what I considered the perfect Lemon Meringue Pie. I was at a diner in Smithtown NY (Paradise), the pie had thin sponge cake as a crust, and a thin layer of sponge cake between the filling and the meringue.

I asked the manager if they made them, she told me no, they got their pies from a bakery in Brooklyn. I asked who they were, she said she was too busy to look it up, call her later. I tried a few times without any luck, now the diner is out of business (COVID victims)

Does this sound familiar to anyone?

Try looking at recipes for lemon meringue tiramisu. I've had that before and it was amazing and sounds kind of like what you're describing.

America's Test Kitchen has a lemon meringue recipe. The crust is either pastry or graham cracker, but I believe there's a layer of sponge cake crumbs between the meringue and the filling.

I'm wondering if you had something like Lemon Sponge Pie, just with meringue added on top after the fact. Though this particular version has a pie crust bottom, it does have a sponge crust top, and it'd be easy to pipe meringue on after the fact and go at it with a blowtorch to finish.
