Long lost potato salad love

Years ago, when we still used Blue Apron occasionally, I ended up falling in love with the potato salad side in an otherwise forgettable Southern style chicken or pork dish. I had lovingly preserved the recipe until my husband, in his infinite wisdom, purged our recipe binder and tossed it. HELP.
Does anyone have access to it? It was a simple, warm potato salad but, crucially, it was mixed with a green pepper and celery. It's the only potato salad I have ever liked and I will be very very sad if I can't find it again. Blue Apron shows a different recipe now for a similar dish so I am out of luck. Googling hasn't helped.
Failing that, does anyone have a potato salad recipe with peppers to recommend me? It must not be too sweet or creamy! Most of the flavor here came from the veggies. Thank you!

Did you see the "Cajun-Spiced Chicken with Potato Salad" recipe? Good idea (in case you're not familiar with it, the Internet Archive's Wayback Machine lets you find backups of what information a website displayed on given dates in the past, so it's possible you might be able to look for the recipe on a backup of the Blue Apron site from the time period in question.)

My Mom's potato salad has green pepper and is not sweet. Here is her recipe:
Kay’s American Potato Salad
5 pounds potatoes
4 (or more) celery stalks, diced
1 medium green pepper, diced
1 medium onion, diced
1 cup mayonnaise - use real mayonnaise, not Miracle Whip, which is too sweet, IMO
1 TBL yellow mustard (wet kind)
salt and pepper
hard boiled eggs
green pepper rings
Peel and cube potatoes. Cook in boiling, salted water until just done. Mix with celery, pepper, onion, mayonnaise, mustard and salt and pepper to taste. Garnish with hard boiled egg slices and green pepper rings.

Your description reminds me a lot of the Very Much Marinated Potatoes recipe from the Moosewood Enchanted Broccoli Forest cookbook. Here’s a version I found online. Even if that’s not quite it, it might be a good starting point for you.

Was it Southern spiced chicken with potato salad and green beans?
Add 3/4 lbs diced potatoes to a pot of boiling water. Cook 13 to 15 minutes, or until slightly tender when pierced with a fork. Turn off the heat. Drain thoroughly and return to the pot. Add 1 tbsp dijonnaise, ½ oz Pickled Peppadew Peppers, chopped, 1 tablespoon of olive oil, and a pinch of the remaining spice blend (you will have extra). Season with salt and pepper; gently stir to combine.
(They say the spice blend contains Onion Powder, Garlic Powder, Ground Yellow Mustard, Smoked Paprika & Cayenne Pepper)
