Cashew Recipes, please!

What are your best recipes or suggestions for things to do with a large amount of cashews?

I received a large tin of cashews for Christmas, about five pounds' worth, so I'm looking for things to do with them.

Are they salted or unsalted? Raw or roasted?

Cashew butter is yummy. So is cashew brittle.

Chop and sprinkle on soups and salads for texture. Good with rich root soups like butternut squash bisque especially.

Roasted cashews glazed with honey and spices. What spices? I've done well with cumin (go easy), carraway (a mistake that turned out surprisingly good), garlic (how can you go wrong?), cayenne (go easy).

Cashew candy: brittle, bark, roca, whatever you can do with roasted almonds.

Cashew brittle- add a knob of butter after sugar is melted. Just a healthy squirt of corn syrup is needed to get a great texture. Melted sugar will slow down on rolling boil and start to turn darker and smell quite suddenly- then you stir in baking soda very quickly so it bubbles again- and dump in (or on) heated nuts. Much easier to do if nuts are pretty warm when it is ready to pour, as cool nuts stop brittle from spreading well. A dash of good flaky salt on the surface is essential.

You can make cashew brittle in the microwave! Low effort, high deliciousness.

This chicken with cashews recipe is quite simple and so delicious I once spilled a plate of it on the floor and ate it anyway. If you're not into dark meat you can use chicken breasts.

If you like Larabars, it's really easy to make your own with dates and cashews and whatever else you feel like experimenting with. (You're supposed to use raw, but I've used roasted cashews with no problem.)

Cashews keep for a pretty long time, so you can make one cashew thing every week or two for the next few months. As long as you've got the cupboard space there's no rush.

Cashews, when soaked for a few hours, become soft like a bean. From there, curry away!

Assuming they are raw. I love tossing them in stir fries. Also cashew butter is amazing if you have grinder or food processor that can handle it. If you are worried about them going off you can freeze them, though like most nuts they do last a long time.

So jealous! I would make this delicious Thai/Chinese Cashew Chicken. The nam prik pao (sometimes sold as "roasted chili paste" is key but easily obtainable at any Asian grocery.

Vegan cashew cheese. Great on gnocchi. Fwiw when I make it, I heat it over a stove slightly to make it thicker before I put it on the gnocchi.

Even if they are roasted, I second cashew cream/cheese. Soak them in water for a couple of hours (or overnight) and puree (probably with some of the soaking water) and use where you'd use cream in savory dishes (more or less -- lots of recipe ideas online). You'll need at least a cup or two of cashews for most recipes.

If they're roasted, the texture may be a bit different and the flavor less neutral, but they should still work.

I put them into a delicious salad dressing I make that has apple cider vinegar, miso, toasted sesame chili oil, salt and pepper in it. Makes it seriously creamy and delicious.

This is a "what would you do if you won the lottery?" type question!

I would keep them in a cool-ish place, and make cashew butter from time to time, snack on them while watching Netflix, and throw them into stir fries and salads (on the rare occasions I make salads in winter).

And be very nice to the gifter over the next 12 months and hope that they give you the same gift for Christmas 2016.

Roll them up in buttered filo dough, bake them crisp, then pour sugar syrup all over them for baklava-like desserts. Preserves them for a good week, too!

This stir fry with cashews is really good, especially with Thai black rice. Also, along the lines of rosemary cashews, cashews roasted with some dried, crushed bird's eye chili peppers are nice if you like spicy snacks.

I have fond memories of making the recipe for carrot ginger soup from the Moosewood Cookbook. It uses a cup of cashews which I guess isn't a huge amount but the soup is pretty delicious.

For a completely different flavor, try the raw cashew dream cake.

You'll need to soak the cashews (don't skimp on this step) and puree them in a food processor until super creamy. Don't worry about the crust in the recipe, the cake works just as well without the crust or with a more traditional graham cracker crust. Strawberries also work well instead of raspberries, but the color won't be as intense.

Cashew cheese as noted above, but they are really awesome roasted with olive oil, Brussels sprouts and cranberries - toss in oil, throw in pan, roast in oven. DONE.

Make muesli, granola or trail mix and throw in as many cashews as possible. Eat for breakfast or as snacks.

My friend made this raw vegan cheesecake for me once. The "cheese" is made from pureed cashews, and the "crust" is made with chopped dates and nuts. I'm not vegan, but hot dang, it was better than traditional cheesecake.

Cashews make great creamy dips and dressings. My current favourite is (roughly) 1 1/2 cups of raw cashews (but I think roasted would be fine), soaked overnight and rinsed. Blend with 1 chipotle pepper in adobo, a little lime juice, a small clove of garlic if you feel like it, salt, and pepper. Blend the heck out of it until really smooth. Add a little water if you like.

We eat this sauce with quesadillas, tortilla chips, smeared onto sandwich wraps, etc.

If you're worried about using them up, they'll keep for a long time in the freezer.

Had a bunch of raw cashews that I was wondering what to do with, so I turned to the Americas Test Kitchen cookbook and found a delicious recipe. Simply toasted them in the oven for about 2 minutes. Made a spice mix of curry powder, cumin and salt. Glazed the toasted nuts in a simple syrup coated them and voila, a tasty snack that we all loved--picky kids included. People have mentioned cashew cheese and vegan cheesecake and chowder, because cashews are used a lot in vegan cooking to add richness and a creamy taste and texture. So, if the idea of these kind of recipes interests you, a search for 'vegan' and 'cashew' will yield lots of ideas.

I haven't made any of these exact recipes, as I was just searching quickly for examples, but I have used cashews in smoothies/'milk'shakes, soups and dairy-free deserts and snack bars, all with success.

Response by poster: Since posting I have made a few of these, and they're delicious! As much as I love snacking on cashews there is no way I could get through five pounds without getting sick of them, so the recipes are much appreciated. Thank you all for your terrific suggestions!
