Best answer: Girl and the Goat Roasted Cauliflower

Cauliflower, Parmesan garlic crunch butter, toasted pine nuts, banana peppers and mint. Sounds like a weird combo, but it's genius, and seriously tasty. This recipe alone has probably tripled our cauliflower consumption - and it never fails to impress whenever we have company, too.

I just made this last night. It's fantastic with cauliflower! Use lemon pepper pappardelle from Trader Joe's. Anchovy paste is much more convenient than opening a can of anchovies.

I've only made the Cauliflower cheese, but all of the recipes from Alton Brown's cauliflower episode looked good.

Cauliflower loaded "mashed potatoes"


Steam cauliflower
Put steamed cauliflower, cheese, cream cheese, sour cream, butter (figure out your own proportions) in food processor
Add spices (pepper, salt, cayenne, garlic powder)
Process until smooth.

Top with shredded cheddar and bacon crumbles.

I have been eating a metric shit-ton of cauliflower rice lately, with the goal of eating less actual rice (arsenic + calories). It's great with curries or anything strong-tasting that you'd normally eat with rice. It isn't rice, per se, and it isn't going to fool you that it's rice, but as its own thing it's quite tasty.

Basically you cut the cauliflower into hunks, chop them up fine in a food processor, and then saute them in a skillet over low heat for a long time to cook out as much moisture as you can. That recipe says to cover it but I don't. I like the cast-iron skillet for this.

I have made pot roasted cauliflower several times and it has turned out pretty great. I have also made a version of this recipe except with chicken. The chicken version turned out great, so I'm guessing that the cauliflower version is just as good.

Smoked-paprika Parmesan roasted cauliflower.

Oh god. OH GOD.

Also, the Alton Brown curried cauliflower recipe is great, but like Alton sometimes gets, is a little over-engineered. you don't need the whole steam-keeping-drying-rack-rig, just toss those suckers on some foil, atop a sheet-pan. Much less of a project.

I really love this cauliflower with mango chutney and cheese. The beer cheese one is a close second.

We often make this one with chimichurri but we really love the plain roasted with cumin.

Cauliflower popcorn.

Cauliflower Steak


I've made both of Bob's recipes, and they're delicious. What he doesn't write in the books with the popcorn is, seriously, cook the cauliflower wayyyyyyy beyond where you think it needs to go. Dark, dark brown. So delicious.

Soup:
Simmer cauliflower in 2:1 milk:cream (35% cream) with a couple of garlic cloves, couple bay leaves, couple sprigs of thyme. When soft, fish out the greenery and puree. Adjust salt and pepper, serve with a garnish of some smoked trout or salmon and a dollop of creme fraiche. You can also roast the cauliflower before simmering to get some good golden colour on it and intensify the flavour.

You can also make an ersatz risotto using the very tips of the trees--I don't have a recipe for this, never made it myself.

Take crumbled feta and stuff the surface of the cauliflower, everywhere. Sautee fine chopped garlic with olive oil, basil, rosemary. Add white balsamic vinegar to make vinegar and oil, brush all over the cauliflower head. Roll the head in good breadcrumbs and bake until browning, in the middle or lower rack of the oven. Slice and serve. It should bake at °325 for at least 20 minutes, in a glass pan with a little water, or leftover dressing, or both.

If you like Indian food or Chinese food, gobi manchurian is awesome. It's fried cauliflower "fritters" coated in a sauce. To me it tastes like a Indian-Chinese version of vegetarian chicken wings. This recipe looks pretty good. You can skip the spicy stuff. This one has a video. And this one seems to use more basic ingredients.

I made this cauliflower fried "rice" recently and it was delicious. I don't follow a paleo diet, so I used soy sauce instead of coconut aminos and just regular fish sauce.

Cauliflower cheese. Curry, with or without the dosa. And if you're feeling brave - fermented. (I'm trying it for the first time now, so I don't have any idea how it will turn out. I don't have an airlock, so I've got a plastic bag of the 2% brine sitting on top to keep it airtight and keep the cauliflower below the surface of the liquid).

Cauliflower "Fried Rice" (a no rice dish; the cauliflower is the rice).

Grate fresh Cauliflower, sautee on high heat in a wok or pan and season as you would fried rice.
Super satisfying comfort food; super healthy; no guilt.

just google for recipes.

OR: cut a cauliflower in half; lightly coat with olive oil and oven roast until just cooked. top off with smoked paprika.

Best answer: If you like the cauliflower rice idea and have a food processor, I've found that shredded fresh cauliflower freezes wonderfully. When you're ready to use it just add a little water, cover and microwave for about 7 minutes, then continue making whichever of these delicious cauliflower recipes tickles your fancy!

This is a recipe which always gets an amazing reception - even with people who claim to hate cauliflower.
Make a dressing of half greek yogurt and half mayo (a dl or 1/2 cup of each), and a finely grated or chopped small onion. Spice to taste with salt, pepper, mustard.
Pick the "flowers" of the cauliflower into the dressing and leave to rest for 30-60 mins. Before serving, decorate with half cherry tomatoes, lemon wedges and maybe little spoonfuls of fish roe or chopped herbs to taste.

Now you have the stalks of the cauliflower left over - I'd use those in a potato-leek soup.

My previously posted recipe for cauliflower salad, with jalapenos, red bell pepper, and (ideally, I often forget) basil and ripe olives. Amazingly good, and super easy.
