Anonymous chat programs, multi-platform

What is a chat/IM program, that doesn't require giving away personal details, such as either your google ID or your phone number, to the other party? Cross-platform (including Windows PC), like Viber, but I understand that program requires sharing phone numbers.
So I want to live chat to someone, sometimes on android phone, sometimes on iPad, or iPhone, or Windows PC, and we have each others email addresses, but no more than that.
Just text? IRC should work.

You can make an account with Trillian or AOL Instant Messenger. Skype is another option. They all work cross-platform and only require an email address to sign up.

The spouse & I still use Yahoo messenger, which works on all those (we use it on PCs and Android phones, but it's available for iDevices) and requires only a yahoo ID (although yahoo will ask you for a recovery phone number, you can refuse to provide one).

Threema is an end-to-end encrypted text messaging client for Android and Ios that you can use without letting it access a phone number - you'd add their user number.

And if you really want to obscure your ID:
Create the account by using a temporary email account that doesn't require a registration from 10Miniute email.
You can obscure your location when you create and use the account by using a VPN.
Non of these measures are to keep the government of tracking you if they have reason to follow your online moves...
