Selling a car (remotely) in Lviv from Spain

A Ukranian friend is currently in Tenerife, and left her car behind in Lviv. The cost of transporting the vehicle here and re-registering it is prohibitive, and as such the best option seems to be selling the vehicle in Lviv, then purchasing a new vehicle in Tenerife so that she has transportation support in her new business. The logistics of this remote sale are ... not entirely clear to us.
She is in the process of writing to 'Women Take the Wheel' in Poland to see if they have any input, and I am coordinating with my network in RO/BG, but I thought maybe someone here could give us some ideas as well.
A major issue right now is trust that the sale will be completed honestly and the money transferred, as things are certainly turbulent right now in Ukraine and there may be more advantage-takers than there were some months ago.
