I'm going to be getting a lot of turnips in my CSA this fall. What are your best turnip recipes? Vegetarian slightly preferred, but not necessary. Bonus points for recipes using turnip greens as well.
I love cutting them into wedges and roasting them. Just olive oil, salt and pepper. They are so sweet and juicy.
Turnip greens are straight-up best when done the Southern way, for me. Cook in a pot of well-salted water with some chopped garlic and either a ham hock or, if you want to keep it vegetarian, a dried chipotle or two. Add a slug of apple cider vinegar and a pinch of sugar, then cook until they're as tender as you want them to be. (For me, this is an hour or more.)

I would use turnips and greens in a big pot of Hoppin’ John. Can be made as a vegetarian full meal. There are zillions of recipes but the basic idea is to simmer together the turnips together with black eyed peas and rice. I usually use plenty of onion, garlic, brown rice and a sturdy green (collard, turnip, mustard beet, etc)

If your CSA is like mine and you have too many greens you can mix the turnip greens with others like kale, collards and mustard, blanch them and freeze for an easy winter vegetable.

I like using the greens in soups. Any sort of bean soup with a broth base works well. Take the greens and chop them pretty tiny or chiffonade, and drop into the soup at the very end.

I know this is probably way too simple, but raw shredded turnips are unexpectedly great in salads or slaws.

I have to drive out of my way to get daikon radishes and have successfully substituted turnips for radish in this extremely simple but surprisingly delicious Korean beef and radish soup.
