How do I keep my IP address anonymous when sending email through Outlook or Thunderbird?

Use a gmail account, using gmail's SMTP. It strips identifying IP addresses.

As skallas alludes to, your IP address is stamped on outgoing emails by your SMTP server, not your client. To circumvent this, you must either use a proxy server (hard to find for mail) or switch to an SMTP server that doesn't stamp IPs.
