What is the best cocktail class in Chicago? (more inside)

I am looking for a basic, but generally sophisticated/creative cocktail class that my girlfriend and I can attend together.
I am looking for a basic, but generally sophisticated/creative cocktail class that my girlfriend and I can attend. I have done some searching, but most of my search results seem either bartending class related or more focused on the Bachelorette party aesthetic than what I am looking for.
Basically, I want a class that focuses on what you need in your home bar, general rules on what to put in a cocktail (I know, distilled liquor, something sweet, something bitter) and maybe some fun recipes to start with. Ideally it would be something that is less than $100 per person.
I did see that Koval does a class every once in a while, but I fear that they may focus too narrowly on their own spirits instead of what tastes best.
Thanks!

If you decide to DIY your cocktail learning, memail me - Paul McGee taught one like 5y ago at the Whistler and I can share a pdf of the "course pack" zine with you. It has recipes, info on spirits, and a "ten-bottle bar" list of recommendations to start with.

Flavour in Forest Park, at the end of the green line has occasional mixology classes mixed in with their standard cooking classes and demonstrations.

And here's one that's hands-on, scheduled for Saturday 7/18: how to make umbrella drinks at Mercadito in River North, $45/person.
