A semi sweet chocolate glaze for yellow cupcakes

I have on hand semi sweet chocolate chips, butter, honey, confectioner's sugar, vanilla, whole milk. Can I substitute honey for light corn syrup? Or, can I substitute milk and butter for heavy cream?

I do not want a fluffy icing. I want a thin type glaze that will set hard but be pliable enough to swirl over the top of the cupcakes. I know I can melt just plain chocolate chips over steam but I am hoping for something with a little bit more body under the hard crust.

Best answer: You can make a ganache melting together just chocolate and butter, anywhere from 1:1 chocolate:butter to 3:1. I like this a lot.

Best answer: My grandmother's chocolate glaze had no cream in it, just chocolate and margarine and I think some extra sugar. Smooth (not crystallized) honey would probably be even better. But since you want these to set reliably I might use the powdered sugar instead.

Best answer: You can totally sub honey for corn syrup. Just be aware you'll taste honey.

Response by poster: I baked a dozen cupcakes. This is both a test case and a giveaway of at least half if the final product is decent. I used a combination of all of your advice. For such a small batch I mixed 1/4 cup semi sweet chocolate chips with 1 Tbsp butter + 1 tsp honey, going for a glossy finish. Re JPD's comment about tasting the honey, I love the taste of honey (my honey is North Carolina wildflower honey hand-delivered by the beekeeper) but, in case my tasters are not as fond, I added a couple of drops of vanilla. The mixture spread very well without dripping. Now I am waiting for it to set up.
