Do it In A Week (and a bit)

I'm going away for a week and a bit. Is there anything I can set up now that will done and ready to be enjoyed when I get back?
So far the only thing I can think of are vodka infusions.

Plant some herb seeds in a trough of moist compost. Put it near a window.

Curing your own bacon takes about a week and a bit. Or, apropos for St. Patrick's Day, you could brine some corned beef, which can take as long as 10 days, depending on the recipe.

Yes, you can brew a decent beer in 11-14 days, "grain to glass." So depending on how long your "and a bit" is, you might be able to drink it as soon as you got home, might not.

You could make reservations at some fancy, hard-to-get-into restaurant so you don't have to make dinner the first night you're back.
You could make refrigerator pickles (there are lots of other recipes online).

Pickle your own hot pepers.
A jar (clean)
Banana peppers (or any hot peppers)
Vinegar - like rice vinegar or apple or something not so harsh
Sugar (white or cane)
Slice peppers in to rings.
Stuff as many as you can into jar
put in about 1/3 a cup of sugar or so
fill rest of jar with vinegar.
stick in fridge.

I'm not a fan of bananas because they're not usually fair trade and I've taken too many history classes, but if
- you don't have the same problem with them that I do
- and you like ripe bananas (or other ripe fruits)
then I recommend buying some green bananas (or other very unripe foods).

Depending on the temperature in your house, you could have a batch of kombucha good and fizzy/tangy by the time you got back.

A search for ""let sit one week" -liqueur" turned up this cookie recipe, the suggestion to put herbs in salt (for flavored salt), reminded me that you can leave garlic in with cheese to get garlic cheese, flavored vinegar recipes, and chocolate-ginger rum balls.

But seriously, not jenkem. And why would you want to do a vodka infusion? They already make flavored vodkas - they're called gin, tequila, rum, whiskey ...

You can make a good start on preserved lemons. I find that 2 weeks at room temp is a minimum; a month is better. Also, gravlax and kimchi.

You're sure to lose your connection or fill your inventory within the first 24 hours, but I am still going to recommend egg farming in New Ham. :)

If you have a computer that stays on consistently without rebooting, consider getting some screensavers or programs that can run and evolve during that time. There are some cool evolution screensavers out there that require quite some time to develop.
Consider buying an ant farm.
Conduct a science experiment with mold.
