How do I use dried oysters?

How can I use a big ol' bag of oysters?

I am thinking of using them in a mushroom risotto, or diced up in congee, but other than that, I am out of ideas. Can I make a sauce out of them and maybe mix it with some vegetables? How would I go about doing that?

Recipes are especially welcome!

Oh, I didn't realize they were dried. It might still work. The congee is a good idea. You might also use them to stuff a chicken breast or pork roast.

You can use up a pile of dried oysters making XO sauce.

I've only heard of dried oysters being used in asian cuisine and have never cooked with them myself.

Two things I have noticed with dried seafood are 1) they often taste much "fishier" than their fresh counterparts, and 2) sometimes they are salted.

I would initially suggest something like making up a small batch of congee that contains oysters and maybe some onions so that you can taste your haul in a fairly bland environment.

Once you know what they taste like you can decide what direction you want to go in.
