I don't want to listen to this song anymore.

I can't remove songs from my iPod touch. Please help me before I lose my mind.

In "options" I have clicked "manually manage music and videos", but in my Music folder everything is dithered out, except the "Sync music" box.

What am I doing wrong?

The reason it's dithered out is precisely because you've selected 'Manually Manage music and videos'. You'll now want to manage your music from the music folder on the drop down list (should be the folder right below the name of your iTouch), not the Music tab on the status screen. In this folder you'll be able to delete songs, drag them over from your PC and change their tags and such.
