Needed - Grapefruit Recipes

Recipefilter - I have a bunch of grapefruit, what can I do with it?

I was recently given a big bag (1/4-1/2 bushel?) of lovely ruby red grapefruit, but there's just too many to eat for breakfast! Does anyone have any tasty recipes or ideas for things I could make with this bounty?

Ideally, I'd like some at least semi-healthy ideas, as I don't need to add to the holiday temptations. Thanks!

This isnt terribly healthy, but it is tasty: if the fruit is unsprayed, try making Candied Citrus Peel.

An Epicurious search turns up quite a few yummy-sounding, fairly healthy recipes, including Grapefruit and Jicama Salad, Grapefruit Star Anise Granita, and Scallops with Pink Grapefruit, among many others.

You can substitute sweet ruby grapefruit quite nicely for mandarin oranges in ambrosia fruit salad. And I like maraschino cherries and salted pecans as a garnish on mine.

you might be able to puree and freeze it. mix chilled puree with champagne or vodka (or sprite) for a pretty cocktail.

mix some into cranberry sauce if you have a christmas feast coming up.

make marmelade.

whiz the puree up with some sugar and spoon over ice cream or pound cake.

mix puree with lime and chile and marinate some chicken or pork chops before grilling or sauteeing.

Avocado and grapefruit salad is the bomb. Add a little purple onion and some Italian dressing and you're all set.

Preserve some, as with the Meyer lemons here, and use wherever you'd use lemons.

Use them to add depth and tang to any savory meat dish.

I hope you're going to infuse it! A good way to do this is to cut the flesh up into manageable portions, fill any container (a cooler with a spigot works great for this) about 1/4 full of fruit, then fill the rest of it with reasonable or better quality vodka and stick it in your fridge for a week or two. The quality of the vodka depends on how extravagant you feel- Skyy or Absolut will work just fine, but of course Grey Goose or Shakers will be marvelous. When you're ready to serve, remove the saturated pieces of fruit, place them in a coffee filter, and squeeze them by hand to extract the most intense flavors of the infusion. For this reason, don't infuse it in the liquor bottle- you can get the fruit in but it's tough to get it out, and the most intense flavors will be released by the squeezing/straining.

Serve it chilled and you will be quite happy with the results. For extra fun, you could try a few different fruit mixes/batches: grapefruit and strawberry, grapefruit and melon, etc.

Marmalade isn't healthy if you eat a whole jar at once, but since it keeps well, you don't need to, and can ration out the goodness a spoon at a time.

If you keep it reasonably cool (not cold, but basement temperature, if you have a basement) the fruit should be good for 4 to 6 weeks, easily. Don't restrict yourself to breakfast - eat it for dinner instead of a salad, or for a light dessert. I can easily eat 2 or 3 every day during the season.

I concur that vodka and grapefruit juice is The Best Drink. I also actually hate grapefruit at breakfast. I peel it and eat it like an orange during the rest of the day, though, and it's absolutely great. I do this with yellow grapefruits, too, which are less sweet than the ones you've got.

I'd just eat one as a snack every day. Easy way to eat planet grapefruit: Cut off the north and south pole, then slice through either the equator, or the two tropics if it's a huge one. Cut each disk into two halves. Makes them easy to eat and you don't even have to peel the mess. The rubies are sweet unless you got a bad batch, so can be easily eaten as you would an orange.

My cousin made this Food Network grapefruit pie over Thanksgiving and it was really tasty. You can use two grapefruits per pie.

Cut the grapefruit in half, spoon light or dark brown sugar on top, put in a pan, broil in the oven until the brown sugar caramelizes.
