Windows 2K+ system administration: Can Automatic Updates be run when nobody is logged in with Admin rights?

yes, there is an option to do just that in the control panel. just double click the automatic updates icon. most of the time after updates you will need to reboot, so the next time you or anyone else logs in after any updates have been applied, the computer will tell you that it needs to reboot at that point.
