Fine dining in CDMX

Looking for high-end restaurant recommendations for Mexico City.
I have reviewed many posts about Mexico City, I am specifically looking for current recs for fine dining, high-end restaurant experiences. We are going in June (!!!!! first time) and want to book a few reservations soon. thanks!

Máximo is a beautiful space with an adventurous menu. Highly recommended.

La Docena (a few locations but I went to the one in Colonia Roma) is some of the best seafood I’ve ever had

Lorea was one of the best meals we've ever had and the hospitality was next level.

Best answer: We learned about (two Michelin star) Pujol from an episode of Chef's Table (still available on Netflix, I think). The madre mole almost made my daughter cry.

Seconding La Gruta for a unique experience. Also we stayed at the Gran Hotel in January. Their restaurant overlooks the Zocalo Plaza which is quite nice for cocktails or dinner. Their food was always good, the service not so much.

It makes me upset, even six years later, to think of how delicious the meal I had at Pujol was. The mole madre is truly something monumental to experience.

Expendio de Maíz. This place was recommended to me in an Ask a few years ago and there are no words to describe it. It looks like a hole in the wall, but it has to be in the top 10 best meals I’ve had in my life (Pujol was another! The food and drink was amazing but I was most impressed by the incredible storytelling about the food by the wait staff.)
On rereading the question/edit: you asked for fine dining. This isn’t it. But please make sure you don’t miss it.

We went to Quintonil around Christmas in 2023 and it was absolutely spectacular. Highly, highly suggested - top 5 meals of my life.

Carmela y Sal. I have detailed notes on other CDMX dining from 2019 but pre-Covid, so no idea which of these are still open. Not all of these are recommendations, Carmela y Sal was the standout, Café de Tacuba is the other place I'd go back to (not fine dining but good).
