Ice Cream Sandwich Cookie Help

My brother and I have an obscene recipe for peanut butter ice cream. We want to make some sandwiches. What kind of cookie?
We tried a chocolate chocolate chip, but I thought it was too much. Actually we did it as a pie with ganache on top, but there's neither here nor there.
I want something fancier than plain chocolate chip. Peanut butter cookies seem like they would be pb overkill.

Best answer: Maybe molasses, or molasses-ginger? Something with a little kick to offset the density of the peanut butter. My other ideas are a banana cookie or a spicy chocolate cookie.

Best answer: The texture is probably wrong but the flavor is a slam dunk if you use world peace cookies - decadent, dark, salty shortbreads. Not too sweet. They are very crumbly and non glutinous. They’d be perfect for a little amuse bouche open face sandwich bite if you don’t need a handheld version

A crunchy oatmeal cookie, and then it's the ice-cream sandwich version of do-si-dos, the Girl Scout cookie.

You do want a softer cookie or it will be unbiteable when frozen. I think a chocolate chip cookie would be nice as an accent that doesn’t compete with your PB ice cream.

I don’t have any fresh ideas but I’ve favorited my preferred options above. I do think a softer cookie is the way to go, although the chocolate wafers could be awesome, too.
With apologies for not really answering your question, I’d love to know what your obscene recipe is. Perhaps I could then make the ice cream and experiment with sandwiches!

The missus has a wonderful soft chocolate cookie that I think would be perfect with peanut butter ice cream. I think it would hold up well, and the chocolate flavor leans into the dark side of things.

Smitten kitchen has some very good advice on the topic of ice cream sandwiches, which I have never personally tried, but mean to each summer. That blog has always been very good for dessert advice.

Best answer: I am not super big on peanut butter but I do love a peanut butter, honey, and banana sandwich. And banana is a great cookie ingredient when you are making vegan baked goods, it does a great job of keeping in moisture so you get a soft chewy texture, which is what you need for ice cream sandwich cookies. So some kind of banana cookie, maybe a touch of cinnamon? With a drizzle of honey either swirled into the ice cream or between the cookie and the filling. Or, just serve the ice cream alongside bananas foster instead of the traditional vanilla.

It really would help a lot to know the recipe! That would make it easier to think through subtler flavor combinations.

Best answer: I came to say ginger snaps. You can also add bacon. Peanut butter and bacon was my father's favorite combination.

if you want to lean into the salty-sweet thing, make your sandwiches with Ritz crackers.

The cookie was very rich and I'm sure the chocolate ganache didn't help the richness.

In the end, my brother requested the Toll House chocolate chip cookie recipe made with mini chips and butterfinger bits.
