Possible burger recipe to replace Impossible Burgers

Looking for your favorite non-meat burger recipe (ala hamburgers) I can make ahead, individually freeze and cook in my air fryer for lunch. Currently cooking Impossible or Beyond burgers. Do you have something that might be a close substitute?

As Impossible and Beyond burgers are 'engineered' meat substitutes, I think it's going to be difficult to replicate them at home. But I make this burger recipe, and it is absolutely delicious.

Adamsmasher's answer to this 2019 AskMe about "foods that are better homemade" led me to the Serious Eats Black Bean Burger which does some clever things to make a meatily varied texture, overcoming the mushiness that can affect bean patties. A fair bit of work, so perfect to make ahead.

This is my go-to for this exact use case! It's not a one-for-one sub for a Beyond burger, but it burgers up nice, freezes well, and doesn't tend to fall apart while cooking. It also appears in Miyoko Schinner's cookbook, Homemade Vegan Pantry, which has a bunch of meat substitutes that taste better than the sum of their parts.

Both that black bean burger and this white bean burger recipe are very good.

In both cases, having pickled spanish onions to hand, dirt cheap and easy to make, are a terrific addition.

Regarding the "'engineered' meat substitutes" comment above: Calling these engineered implies genetic engineering, and that is not what's going on with either company.

These products are not lab-grown meat - they are made from plants. Beyond has mung beans and brown rice proteins, as well as pomegranate, beets, and apples. Impossible burgers contain soy and heme (from plant sources).

I make a great veggie burger out of tofu and chickpea flour. That recipe is similar to what I make.
