7 hour dinner getaway in Lima, Perú

We're going to have a 7-hour layover in Lima, Perú this Monday, including dinner time.
What neighborhood (or specific restaurant) would it make sense to go from the airport for dinner and a quick walk?
My spouse, who last flew into Lima in 2014, had this to say: Customs going into the country took awhile, around an 45 minutes. The airport is actually in Callao. You are probably looking for a restaurant in Miraflores or San Isidro. The cab ride to either could take 20 minutes, or it could take an hour. A lot depends on traffic and time of day. Lima is considered the food capital of South America, so there are a lot of quality restaurants to choose from.

I'm in the travel industry and have been there several times, most recently in September. And I send a lot of people there too. Seven hours between international flights isn't really that much free time. And that's if you arrive on time. Some logistical points:
You'll need an hour to 90 minutes to get off the plane, go through customs and immigration, and then exit the airport.
Will you have luggage or are you doing carry on? There is a left luggage area in the airport, but consider that you'll need time to go do that. Walking around the city with luggage will target you as a tourist.
Do you have local currency already? If not, I'd grab a small amount and exchange that in the airport. There is an exchange booth after you go through immigration and before you get your luggage. A lot of places do take US dollars or credit cards though.

Keep in mind for international flights you need to check in 3 hrs prior to your flight to Chile. Don't forget to factor in the time you need to get BACK to the airport before you check in.

LIM has VIP lounges that allow you to use for $40 per person after you’ve checked in for your SCL flight. The most pleasant way to spend the last few hours in the airport.
