No, this is NOT "Mindblown: A Blog About Philosophy"

I have set a new, blank page to be my posts page on a wordpress site. When I hit publish and go to the page, the posts are there. But the main header says "Mindblown: A Blog about Philosophy" as well as some other content instead of what I've told it to put there. I tried to google the problem but what pops up is not any advice on how to fix it-- just hundreds of similarly misconfigured pages called the same thing. What gives?

The Site Editor will let you manually change that header text. While you're in the WordPress dashboard, go the the sidebar on the left and select Appearance, then Editor (beta). Select the text and change it. (This seems stupidly clunky, especially as the Site Editor is still in beta, but it works.)
