Where to eat fancy, fully-vaxinated, non-spicy, vegetarian near Seattle?

My partner and I are celebrating and would like to find an extra special place to dine. Unfortunately, most of the fancier restaurants around Seattle tend to be unsuitable for a vegetarian who can't eat spicy food. Also, it is important for us to dine at a restaurant that requires proof of COVID-19 vaccination—not just a recent negative test—for all patrons (and ideally staff)
I asked this question previously, but am asking again since COVID restrictions are a new factor and we've already been to basically all the suggestions from that thread. So any suggestions would be most welcome aside from:
• Canlis (unavailable and don't require their staff or patrons to be vaccinated)
• Farm Spirit (unavailable)
• Café Flora
• Momiji
• Tilth
• Art of the Table
One of us eats everything and the other doesn't eat meat or anything which is at all spicy. Where can we go that we will both enjoy as a special-occasion dining experience? In the city is great, but we're also open to driving a bit, maybe even staying a night somewhere in service of making it memorable.

All of Seattle restaurants should be requiring vax proof now (though I've found it a bit iffy).
Try Plum Bistro or Mamnoon for a fancy dinner (note Mamnoon's has a couple of different spots with degrees of fanciness, you want the one on Melrose Ave).

This is incorrect - King County requires proof of vaccination or a negative test.

I can't see Nirmal's vacc requirement on their site, but they have vegetarian options (https://www.nirmalseattle.com/dinner-menu/)
Meesha also has a ton of vegetarian options, but they are following King County guidance and accepting negative test results for people who can't be vaccinated. You could call them and ask how many people have used that?

Windy City Pie in Phinney Ridge? It may or may not be as extra-special or fancy as you are looking for, but they require proof of COVID vaccination for dining in, and I find the restaurant quite cozy and charming. You could make the experience even more special by strolling through the neighborhood after for ice cream at Bluebird, gelato at Nutty Squirrel, a cocktail at Oliver's Twist (which required proof of vaccination to dine-in even before the county mandate did), or to check out the new wine bar, Chez Phinney.
Alternatively, perhaps Autumn? I am not sure whether they will accept a negative recent test in lieu of vaccination, but you could call to find out. They have a number of delicious not-spicy vegetarian options.
