Can you direct me to more string/piano/both music in the style of the song Over by Julien Baker?
XPURM - PRUMX (I love this album. Not all the songs have strings. Also, it's free.)

The rather minimal feel reminds me of works by Ludovico Einaudi (example Due Tramonti) or Ólafur Arnalds (example Words of Amber) - both artists have written a lot however.

Seconding Ludovico Einaudi's "Eden Roc" album - I particularly like Fuori della notte.

If it doesn't have to be both:
Piano
Hania Rani - F MAJOR and here she is live with multiple keyboards and loop pedals.
Strings
Richard Skelton - Landings
Julia Kent
Deaf Center - Owl Splinters
Both
Maybe Wim Mertens? Here he is doing Close Cover on piano with string accompaniment. And here is my favorite recording of him, Often a Bird, with full orchestra.
And not exactly what you're asking for, but you may like Caretaker -- he has also released piano-based music under the name James Leyland Kirby.
