Can I eat this bread pudding?

Made a bread pudding - eggs, milk, sugar, spice, old bread. So pretty. Let it sit on the counter before baking for 30 minutes as per the recipe. Put it in the oven for an hour. It hadn't set by when I expected it to. Weird. Whatever, cooked it a bit longer and it looked, mm, ok. Took it out and set it on the counter to cool. And then...

Two hours later I realise that I had put it in the wrong cockadoody oven (we've got two ovens, a small top oven and a large bottom oven.)

So, total of three-ish hours at room temperature or a bit above (the not-in-use-oven gets kinda sorta hot.) It's in the CORRECT oven now, cooking.

What do you think, when it comes out should I eat it?

Best answer: I think you're probably fine. The very conservative federal guidance is 2 hours with the ingredients at room temperature, but I bet you pulled the eggs and milk from the fridge, so you're probably well below that.

(ok fine that is not practical. yes, i would have no qualms about eating this once it is baked and so delicious)

Best answer: Totally fine. I think the official advice is generally a total of four hours in the "danger zone", so you're within that. But I'd personally eat things which were out slightly longer than four hours, as I think four is conservative.
