A real rhubarb of a pickle of a jam

I need a dessert recipe that would work with a strawberry rhubarb compote. Help.

So my James Beard recipe for shortcakes didn’t exactly turn out (they ended up being quite flat). I was going to bring them for a friends birthday dinner tomorrow, but I don’t want to serve flat shortcakes. I do have a quite delicious strawberry rhubarb thick sauce/ thin compote (think applesauce texture) ready to go. What can I make tonight/ tomorrow morning to go with the sauce?
Assume I have all baking ingredients on hand and ready to go. Thanks in advance!

Best answer: If it feels like spring or summer where you are, I might opt for ice cream.

Meringue nests

Best answer: Yeah ice cream with... hear me out... some really nice balsamic vinegar would pair nicely with your compote.

Best answer: I came in to recommend a pound cake, too. I might go for a cream cheese-based cake.

I'm not sure exactly how thick your compote is, but if you're interested in incorporating it into something, these rustic rhubarb tarts are amazing. The compote dries out a little bit because you're baking it, so it can work pretty well even if there are some runny bits (better if the compote has some chunks in it, though.

Another option is this almond cake.

Best answer: My wife makes an amazing strawberry rhubarb pie. Could you make shortbread cookies or sugar cookies with a thin layer of compote on top, or in between two?

Best answer: If you’re willing to try a different shortcake recipe, this oat shortcake recipe is quite delicious with rhubarb. I just use milk in place of the cream. Recipe includes instructions for a roasted rhubarb compote, but can confirm that it is also tasty with strawberry-rhubarb!

Best answer: Pavlova is a big soft meringue and would be very tasty with your rhubarb compote and maybe some whipped cream. It's not hard to make but feels impressive and festive.

Best answer: This panna cotta. It's easy and fantastic, but note that they'll need to chill for a few hours.

Since you already have the strawberry in the compote, you can leave the puree out of the panna cotta and just leave it as plain vanilla. I often do that and it works out just as good.

I ended up having no extra time, so flat shortcakes it will have to be! I’m looking forward to working my way through the above recipes so I’d call that a win!
