Bubbly booze on tap

Inspired by this question, I was wondering what boozy concoctions I could put on tap in my kegerator.

I have a kegerator and kegs that I use for home brewing. The kegs are 5 gallons each and can force-carbonate any liquid by injecting CO2 into the keg. (I currently use it for seltzer water on tap when I don't have any home brew.)

What alcoholic drinks should I put on tap? Hard lemonade? A big batch of gin and tonic? Any suggestions and recipes are welcome! They can be as small as 1 gallon or as large as 5 gallons.

If you can get ahold of a keg of Fizzy Wine, it's freakin awesome.

This is a pretty decent roundup of carbonated cocktails from 2015. From that list (but not necessarily at those bars) I've had a carbonated Negroni and a Corpse Reviver CO2. Before it became part of the permanent Pop-Up Bar one of our favorite DC bars was Southern Efficiency, which rotated out carbonated cocktails pretty regularly. They were making a gin & tonic for a while (and providing it to at least one other bar in town) but they also made a house cola they used for a premixed cocktail, and around Derby Day they premixed a mint julep. Instead of muddling mint a la minute they made mint syrup with sugar, water, and fresh mint, then made the mix with that syrup.

NB if you want to use citrus (like in a force-carbonated French 75) you should probably look into clarifying methods because otherwise you'll get precipitating solids before you kick a keg.

Champagne on tap was always a big hit with my Mardi Gras Krewe. Never lasted long on parade day.

Moscow Mules on tap are a huge hit at the local ginger beer shop, and there's plenty of variations from there (Dark & Stormy, etc)

While not a fizzy drink, I do have a recipe for making 5 gallons of Mai-Tai from scratch, if you'd like. Great for having on-tap if you're throwing a tiki party.
