BBQ dish.... while traveling

I'm going to a work BBQ tomorrow and I need to bring a dish but... I'll be traveling with a giant suitcase all day. So it needs to be something that packs well.

My office is having a BBQ tomorrow afternoon after work and we are all bringing dishes. My coworkers are bringing: pork belly, chicken wings, salad, booze... that's all I know of thus far. What can I bring?

The problem is that I'm heading out of town immediately afterwards and will have my giant rolly suitcase with me. I need both hands to lift it while traversing the subway. So whatever I bring to the BBQ has to be in a tupperware which is rattling around in my suitcase through three subway trains and a dozen staircases before it even gets to the office. Then it has to sit around for eight hours until the party.

So I need something that travels well. Please give me recipe ideas! My strength is baking, so cookies/brownie type recipes are great. Or anything else that might be fun for a bbq and doesnt rely on looking good. No mushrooms or beans because, yuck.

Whenever I have to travel with shelf-stable treats, I immediately think of spiced nuts or pralines. If you're somewhere warm and you want to avoid turning on the oven or dealing with a candy thermometer, you could make fancy rice crispy treats.

I made these treats for a work thing and drizzled dark chocolate on top. They were really really good.

Seconding fancy rice krispy treats. Use a little extra (salted) butter and add sweetened coconut flakes. I make these for parties all the time and I always go home with an empty platter.

Can you offer to bring non-alcoholic drinks? I would think a couple of large containers of lemonade + iced tea would travel well (unopened, so they don't spring a leak), and then could go into the fridge to cool off for 8 hrs once you get to work.

We pair BBQ with garlic bread, always wanted to try this recipe you can prepare at home and when the grill is fired up place on grill.

Best answer: S'mores Bars!

No matter how well you wrap it, it's very likely that whatever you put in your suitcase is going to leave a lingering fragrance. As much as I love garlic bread, at least s'mores you can pass off as some kind of perfume or lotion.

These chocolate peanut butter Rice Krispie treats travel really well and are so yummy:

Their texture is amazing and though the wheat germ seems incongruous, it adds a special something. Plus all those vitamins...

1 cup corn syrup
1 cup sugar
1 bag semi-sweet choc chips
1 cup smooth (or crunchy I guess) peanut butter
1 tsp vanilla
6 cups Rice Krispies
Wheat germ (I think we buy it already toasted?)

Put the sugar and corn syrup over medium heat and cook until sugar dissolves. Turn heat to low and melt in the peanut butter and chocolate. Remove from heat and stir in vanilla and then Rice
Krispies. Press into a 9x13 pan and sprinkle with wheat germ.

I like the cornbread idea, and you can get a little further by pairing it with a honey-orange compound butter, or just honey, or a syrup (sorghum). Or you could go the cheddar-jalapeno direction with the cornbread.
