Seeking good ______ of the Month Clubs

Looking for some recommendations for fun, surprising ______ of the Month subscriptions.
Have you signed up for, or been given a subscription to a service that sends people some thing every month (or other time period)? I'm looking to give something like this as a gift. I'm more interested in ones that give people unknown or unexpected items, and a variety of them (like Birchbox). Especially interested in ones that would be of interest to men in their late twenties. Locations would be in the United States, including non-continental.

Zingermans has some great subscriptions, including bacon, "forbidden foods", and a "culinary adventure society".

Previously. That had a lot of cool subscription-y based gifts, also the question that that question linked to had more fun stuff.

I just did a roundup on this on my blog if you are interested.

Not variety (books all the time) but my favorite book store in San Francisco, Green Apple Books, has a great book-of-the-month club. I just gifted a membership to a friend and he was ecstatic.

Check out Quarterly, which lets you subscribe to tastemakers. Packages come only once every 3 months, though.
