Interesting Uses for Coffee Syrup?

RecipeFilter: What should I do with all this Rhode Island coffee syrup?

For reasons not worth explaining, I have in my possession an ungodly amount of traditional coffee syrup. Other than making coffee milk, what can I do with it? Ideas that use large amounts are especially welcome.

Best answer: I've adjusted my post-gym routine to include coffee milk instead of chocolate milk and that uses up some of it. It's great on ice cream and I'm sure you could make something up with mashing up some vanilla ice cream, mixing in a ton of coffee syrup and then making little coffee ice cream sandwiches with sugar cookies or something. I also have a lot of it and I'm always looking for ways to sneak it in to desserts. You could also make coffee ice cubes in bulk and use them in iced coffee drinks once it gets warmer.

It's a good addition to moist spice cake or ginger cake: adjust the amount of sugar in the recipe to offset the syrup.

I'd think you could substitute it for chocolate syrup in a lot of recipes, like these brownies. Haven't tried that myself, though.

Coffee milk and Del's Frozen Lemonade are two of the things I miss the most about living in Rhode Island.

Bait for insect traps? I love coffee, but this stuff has never worked for me. (Then again, I have only lived here for ten years...)

It goes well with vanilla ice cream into a malt/shake/frappe/cabinet/McGuffin/whatevah; I think I tried making coffee ice cream with this and it wasn't successful. My mom used to add coffee to her chocolate chip cookies, and some day I should probably try the same thing but using coffee syrup. It might be an approach to making a granita or sorbet, but I am firmly in the ice-cream-over-sorbet camp. Wow, do I sound intolerant!

Note that jessamyn's suggestion of making ice cubes out of it will have the side effect of sweetening your beverage as the cubes melt. I drink black iced coffee, so this also doesn't meet my needs -- but it's a fine idea otherwise.
