I haven't been to CC, but I am a hawkwatcher (in California), and have heard many good things about the hawkwatch there. CC's Audubon has good info as well.

There are great birdwatching areas and an amazing bird sanctuary in the area. A lot will depend on how far you're willing to go -- you can do some birding in the city (mostly south along the coast from downtown), but the better birding is generally out of the city proper.

You can windsurf in the bay, but you don't mention if you have your own gear. There are shops along the T-heads and the L-head (three piers that stick out into the bay from Shoreline Drive) where you can rent gear, so I'd just find a spot to park near the T-heads and get some quotes from some of the shops.

I honestly don't think I've ever seen anyone kayak in the bay but if it can be done, you can do it, and you can (again) rent gear along the bayfront.

As for sightseeing...the bayfront is a lovely place to spend some time, but I recommend getting out of downtown CC. It's pretty depressing nowadays -- very economically depressed as well as just run-down and sad looking -- so most development has moved inland. (I personally can hardly stand to drive down Ocean/Shoreline and see how run-down everything is.)

So, other places to enjoy -- get out onto the Island (not North Padre Island, just over the Harbor Bridge from downtown, but out over the JFK Causeway, which is south of downtown). Mustang Island in particular is just beautiful -- it has a wild feel, even though it's not, and development is minimal. If you feel up to it, drive all the way out to Port Aransas -- great little fishing town. Or go north of Corpus into Rockport, another great fishing town with a very low-key vibe.

Not sure what else you're looking for in the way of specifics, but I grew up in CC, just like my parents before me and my grandparents before them, so if you want more specifics, feel free to MeMail me.
