Oh Broth-er
November 8, 2024 8:34 AM
I've been impressed with the soup/spice packets in modern ramen pouches, whether Shin or Buldak or others, which are far more complex, spicy and savory than the ones in the cheap ramen pouches of my youth. However, I often discard the noodles in favor of leftovers to add to the broth. That seems wasteful.
I've bought several broth/soup powders in the past, but they haven't matched the quality of the higher-end ramen packets. Any recommendations on excellent powdered soup packets for a leftover lunch?
I bought this packet of seasoning a while back and I'm pretty happy with it.
An Asian market would also be an excellent place to look for just broth base or seasoning packets, if you have one in your area.

Jacobsen Sea Salt out of Oregon sells a Ramen Seasoning shaker. I'd say it aims for "classic ramen packet but done nicer", vs. going *full* Shin/Buldak; but I rather like it.

Buldak sells its sauce in little packets (a mascot handed one to me on a street recently!) or a bottle now.
I promise not to threadsit, but I thought the Buldak sauce in the bottles was a hot sauce to pour or dab like Tabasco or sriracha, not a broth/soup base? Do you have a link to the soup base available in bottles? That'd be great.
Also, I should probably clarify that I'm specifically looking for single-bowl packets of something especially savory, spicy and/or numbing like what you get with Shin or Buldak. I'm looking for something a bit more aggressive than Kikkoman or a standard ramen seasoning.

Not individual packets but you could experiment with dashi stock, hot pepper pastes like gojuchang, and a few spices. Probably wouldn't take much time to come up with something even better than the packets.
