Due to circumstances, I will be by myself for all of next week. Additionally, I will be somewhat immobile so I am going to be starting the binge rather early in the evening...
I am pretty much open to watching anything and if you could please limit suggestions to one, or maybe two shows, I would appreciate it. Please feel free to nth anything listed as I might just compile and go with what's popular to start. No worries about what i have already seen or what my tastes are (literally anything from Game of Thrones to Schitt's Creek). So the question is if you could have someone watch just one or two shows, what would they be? Kind of a desert island question. And forgive me as i know there are a lot of previous questions about this but i just need something more concise and less overwhelming. Thank you!

ADVENTURE TIME
There's ten years of 15 minute long episodes. Most episodes are stand-alone, but there is an overarching story that develops gradually over time and mostly by accident. It's perfect for dipping into for five or six episodes at a time without feeling like you've spent the entire day binging.

Without knowing the services you're subscribed to, I think the Wire and the Expanse have rewired my brain more over the last twenty years than just about any other series and the character development is just top of the heap. The Good Place, Sports Night and the Animaniacs for more light-hearted fare. I enjoyed "For All Mankind," but haven't gone past the first couple of episodes. For non-fiction, I really enjoyed "The Mind of a Chef" - first and fourth seasons mostly. There's a spot of cringe with Batali briefly appearing in season 4 (before the allegations), but overall it's a thoughtful series. Casting further back, I liked the John Adams series with Paul Giamatti.

Nirvana in Fire - Chinese wuxia take on the Count of Monte Christo. I inhaled it in very similar circumstances and it's so good and moreish.

If you're cool with subtitles, Chinese fantasy stuff, and gay soulmates who are never explicitly gay on screen due to lol media stuff, The Untamed is ideal for binge watching. (Otherwise it can be very easy to lose track of the timeline and who everyone is.) If you find yourself lost due to a combination of a very large ensemble cast and people's hairstyles being largely very similar, or other cultural elements, here is a cheat sheet of sorts which explains some basic terminology, tropes, naming conventions, etc.

Seconding Nirvana in Fire, though I was thinking of a different Chinese show (they tend to be like 40-50 longish episodes, thus good for a prolonged binge) - The Sleuth of the Ming Dynasty.
Two good bingeable Korean shows: My Mister (not a romance, very very good; also on Netflix) and Mr. Queen (an insane-in-the-best-way historical romance, but apologies for the last episode; also on Netflix)
On preview: yes to The Untamed!
If you're not used to the above genres - give them a few episodes, the conventions are different than US/European-type shows, but they're very binge-worthy.

The West Wing, but if you've already watched it a million times and aren't up for another go, both Madame Secretary and The Diplomat (Keri Russell, not the Spanish one) will scratch the thematic itch and occasionally quirky tone.
Sports Night, Ted Lasso, Community, and The Good Place for comedies that operate on multiple levels of humor, silliness, word play, and gentle humanity.

Freaks and Geeks. It deserved more than one season, but therefore you can watch the whole thing.
Veep.
I'd also highly recommend Bojack Horseman. I had to space it out because of its emotional intensity, but your tolerance for a self-loathing cartoon horse might be higher.

The One Piece anime is somewhere around episode 1100 right now. In a week you can put a small dent into that but the good thing is that the first few arcs are really good so you aren't waiting a season for it to hit its stride.
I'm slowly going through a re-watch of the Expanse. It's a great show that rewards multiple viewings.

Star Trek: Deep Space 9 because that show holds up -- if you're handy with BitTorrent you can find a version where the DVD scans have been upscaled to 1080p.
Although honestly, if you have a ton of free time coming and the ability to watch streams for hours on end, consider getting into excellent RPG streamers -- for example Dimension 20 on Dropout TV or Critical Role.

I just binge-watched "The Lincoln Lawyer" and it was excellent specifically as a binge.
Haven't seen anyone yet mention my favorite ever sci-fi TV show, "Fringe" -- also very binge-able (the first half of the first season it's finding its footing, but is still good -- just gets truly excellent after that).

Currently alternating between This is Us and Foundation with Taskmaster thrown in for variety. (I think Taskmaster is better as spice - more than two episodes in a row and they start to run together and be less fun)
Foundation is gorgeous sci-fi and we are hooked but you have to forgive it for being nothing like Asimov's stories - Psychohistory is about large groups of people and the TV show is all about exceptional individuals driving history but as I said, if you let go of that, I find it very bingeable.

If you were ever a fan of Power Rangers, I highly recommend Ultramechatron Team Go! which is a delightful send up of that style of tv show. It's available on Dropout, which is all original comedy content and extremely binge worthy.

Ditto the earlier recommendation of taskmaster.
And if you don't mind something episodic rather than serial, I like Hustle a lot. There are some instances of brits doing less than optimal american accents across the series but they're basically like a mini oceans eleven in each episode.
Barring region locking (both are available to me in Canada), a lot of each is available on youtube: Taskmaster, Hustle.
