I'm getting back into minecraft...

What minecraft add-on content is worth trying out? I've not played in ten years, and I see there are all sorts of stories, adventures, games-within-games, and story-based content. But, as I'm not 9-years old, I can't stand scrolling through page after page of kiddo stuff. Got any recommendations for quality stuff?
Back in 2012 I was a minecraft fan (shout out to MeFightClub), playing on minecraft java. I put hundreds of hours into recreating historic buildings, but then they started adding cats and swamps and I graduated from grad school.
I've been thinking of going back and "beating the game" and seeing what's improved, so I'm firing up Bedrock Edition (so I can use the shader version). I'm having a grand ol' time.
But as I browse around the internet I see lots of *new* stuff. 10 years of updates, memes, drama, innovations, and mods, including story-based games, downloadable maps, and stuff like that.
I'm curious in all that stuff. Got any recommendations for stuff that's worth checking out? I'd be interested in fun adventures, games-within-games, all of that stuff. Especially if it's something that can be played co-op with a friend on bedrock without too much trouble.

Response by poster: No kid - just a husband, haha. Thanks tho! I don't care to mod, I'm mostly looking for recommendations on the best fan-made, 3rd-party made, or official additional content.

My understanding is that Bedrock is harder to mod— if you want that, you may want to switch to Java. You can get shaders there too, as mods. These days, if you have one version, you own the other also. I've been itching to try the Create Mod, which adds absolutely insane steampunk devices.
Minecraft Dungeons is worth trying out. I couldn't finish it, but it's a fun game, and though it has no mining or crafting, you will know almost all the monsters already.
