Spice my chorizo

I'd like to convert 1.5-lb. packages of ground pork into chorizo. Serious Eats's Easy Fresh Mexican Chorizo was a pretty good experiment (too salty, needed more smoke). Please give me your favorite recipe!
I'm partial to smoke/salt, less so to sweet. The house favorite for purchase is El Supremo Chorizo, if that helps narrow down spicing. Assume a well-stocked spice cabinet.

You could simply reduce the salt in your recipe and add either smoked paprika or a bit chipotle.

I use this one. I use a spice grinder rather than a mortar and pestle. For more smokiness, you could sub some chipotle powder for the ancho. I use this for Aaron Sanchez's Chorizo cornbread stuffing, which is yummy. He also has a chorizo recipe, but it uses a lot of ancho and I've never tried it.

I've made it several times, and in my experience the mixture benefits from refrigerating overnight before cooking.
