What free and paid livestream platforms have the best video quality?

What livestreaming platforms have the highest quality video? I sometimes livestream 1 or 2 hour protests, and I would like to download the video after and post clips to social media. What are the best options (free and paid) that produce the highest quality livestream video. (iphone)

As I understand it, video quality on a live stream has much more to do with the network bandwidth available to the device generating the stream than with what it happens to be connected to in the backend. During the Jan 6th insurrection riot, for example, there were so many phones running so many live streams that they clogged the cell towers and nobody got decent bandwidth and all the live streams were shit quality; such high quality footage as subsequently turned up on e.g. YouTube was locally captured as well as live streamed, then re-uploaded after the event.

But I've never done this personally so I could easily be talking through my arse.
