Vegan Challah recipe

I'm looking for a decent vegan challah recipe. Ideally the dough freezes well and the cook time isn't different than for regular challah, but any suggestions are welcome!

I havent made this myself (im not a vegan and rarely bake enriched breads) but Isa Chandra Moskowitz is an authority i trust on vegan cooking and this appears to be a version of her challah.

No notes on freezing but the times seem pretty consistent with non-vegan challot.

I'm annoyed that I can't find my recipe right now, but it's really similar to this. Basically, you don't need to fuss with a lot of substitutions, just stick with a basic recipe without eggs. I do a maple wash on the top for color.

You might have luck with the search term "water challah," which is a Sephardic challah that doesn't have eggs. Sometimes they're not enriched at all (no sugar, no oil), but you can find recipes that do have that. I haven't made this one from Jamie Geller, but I have made other recipes from the site.

Otherwise, I agree with BlahLaLa -- a simple enriched white bread would work fine. Flour, water, oil, sugar, yeast. The maple glaze sounds tasty, but brushing plain oil on top also makes for a nice crust. Or, if you want a golden hue, I've been meaning to try this tip from Sanjana Feasts: 3 tablespoons of coconut milk with a pinch of turmeric in it.

I don't typically freeze my bread doughs, just the baked bread. But if you're used to freezing bread dough, one without eggs should freeze just as well as one with so do what you normally do there. White bread baking times are all pretty similar, too.

I've made this vegan challah several times and it's delicious! It uses a tang zhong to create a soft and pliable crumb that melts in your mouth. A small amount of chickpea flour adds some color and flavor.

The chocolate chips are my jam but can be left out if you don't want to use them, and I've made this with 100% all purpose white flour instead of a mix of white and whole wheat as called for, and it was fine.

I've never frozen bread dough before so I can't speak to how this freezes.
