Cooking with fancy canned tuna
November 5, 2020 1:22 PM

We bought some fancy canned ahi/yellowfin tuna at Costco and are looking for good recipe suggestions!

Impulse-purchased expensive canned ahi/yellowfin tuna at Costco. We typically just buy Chicken of the Sea or whatever’s on sale and use it exclusively for tuna sandwiches when we don’t feel like cooking. This seems like a higher quality product that probably deserves better, so I’m looking for recipe suggestions! Anything that takes advantage of other pantry/canned/frozen foods is a plus. We have a well stocked pantry and a fairly well equipped kitchen. I don’t do well with spicy foods. Otherwise open! Thanks!

A little bit out of left field, but how about a Thai-style tuna salad?

It doesn't have to be spicy at all (you can omit the fresh chilies, and the Thai chili paste called for is definitely on the sweeter side, though you could also just omit it as well).

This tuna spread is heaven on a crostini.

1 can oil-packed tuna, drained. (I drained water-packed and added a little oil.) Chop this coarsely in food processor. I added 1/4 cup finely chopped onion. Add 1.5ish Tbsp of soy sauce, lemon juice, and a bit of good balsamic. Whirr. Then add about 2 Tbsp softened butter, in chunks. Whirr until incorporated. Better the second day. Bring to room temp for 20 minutes or so before nomming. Nom.

this is so distressing. why hasn't anyone mentioned tonnato yet?

i made tonnato last night, with fancy costco tuna even. i halved the recipe; increased the lemon juice (reducing viscosity and increasing acidity) and added a little chili flake. it's delicious and versatile, going on just about everything. i used it to dress a salad this morning and drizzled it over roast potatoes. it keeps for a week.

Best Tuna Melt Ever.

I was never a fan until I tried this recipe, and it is amazing. The recipe calls for tuna steaks, but you could easily use canned tuna - the flavor profile will still work.

Pork Tenderloin Vitello Tonnato (Veal With Tuna Sauce) Recipe
That's kind of a confusing title but to me the point is that you can use the method with different meats. This is also something that will work well with leftover turkey, given the season.

Seconding cyndigo's recipe, too.

But I save my luxury tuna for salade Nicoise. There are thousands of recipes out there, and you do you, but the thing is that if you have really good tuna, maybe let it shine in a simple salad with lettuce, eggs, string beans, tomatoes and a dressing with excellent olive oil, shallots, lemon and salt and pepper, instead of mixing it up so you can't tell the difference between your expensive product and the standard.

This easy tuna pasta really was easy and delicious, and it is a good way to let quality tuna shine. I added toasted pine nuts.

Oh my god, make some spuma di tonno. (And then never ever call it ‘tuna mousse’ ugh). I could just eat that on fancy seedy crackers all day.

I recently attended a virtual cooking class where we made tuna-and-potato-stuffed red peppers, with the very fancy tuna conserva. It was SO GOOD.

I never got the recipe, but basically we mixed the tuna, mashed potatoes, chopped capers, and parsley gently with some seasonings, spread them on roasted red peppers that had been cut open to form more of a sheet, and rolled them up. Chill for a bit, slice, and voila: much yum. We ended up with more filling than we had pepper for, and I just ate it all with a spoon while we made other things.

Pan Bagnat aka the best picnic sandwich ever, or Salads de Nicoise. I haven’t made it, but this slightly fancy pants tuna melt casserole sounds good too!

My favorite thing to do with tuna BY FAR is a Japanese dish called Onigiri.

https://en.m.wikipedia.org/wiki/Onigiri

It is a rice ball (prepare rice in a similar way as you would sushi) filled with tuna spiced with whatever you’d like and wrapped in seaweed. I prepare my canned tuna with mayo, sriracha, garlic salt, onion flakes, soy sauce, and sometimes spicy mustard. Put a small spoonful into the middle of a rice patty, form into a cute little triangle and wrap with a strip of seaweed. Best dish ever, and good on the go!

Fun fact—this dish shows up a lot in anime and manga, characters love it. When some of these shows/books are “westernized” to appeal to Americans, Onigiri is often replaced with other things. Like donuts. -_________-
