Which pair of animals which can interbreed taste the most different.

So. A lion and a tiger can interbreed, but I'm pretty sure they taste fairly similar. Zebra and Horse are *mostly* the same, but with a small difference to the intensity of flavour. So, what two animals, which can interbreed, have the most distinctive taste.

Yes, I will eat the resultant offspring.

I would guess it would be some kind of game bird — they have pretty distinctive tastes. A quick Google suggests that a pheasant-turkey hybrid was produced in 1761. That would be my choice.

Obviously the antelope and the jackrabbit.

There are Renaissance-era stories of a chicken and a pig, but these are actually stories about a capon and a pig, and as everyone knows capons can’t reproduce.

Game birds are probably your best bet for vertebrates; but the real answer is among the Hemiptera. They can interbreed widely and range from spicy and complex to smooth and buttery, with varying ranges of gaminess.

I’d also advise considering all stages of life as well as all parts of the animal. The muscle of an adult chicken tastes rather different than an egg. Likewise for bony fish. In the insect world, larvae and adults have distinctly different flavor profiles and textures. Most people agree beef liver tastes rather different than kidney, etc.

Clearly you are well versed in such matters but I mention this for any other interested parties.

I won't be trying it but I would guess dogs would place fairly high on the list - they have more artificially-created variety than most other critters. Like a St. Bernard and an African wild dog have got to be pretty different. Bird hybrids as mentioned above would be the other bet.

Invertebrate-wise, SaltySalticid probably has it.
