Can I eat olive this?

Left a 3/4-full Costco jar of kalamata olives out, open on the counter, all night. Still safe?

House is kept at 60 degrees overnight. My instinct is to say yes because they’re cured and in brine, but wanted a second opinion.

Same instinct. That's what the brine is for, to preserve them without refrigeration.

Sure. You can enjoy them with the cheese you left out overnight as well.

If olives are covered in brine, they don't need to be refrigerated at all.

No need to kalamata the whole thing off.

They're stored in brine and fine to eat.

Yes. Olives are a preserved food, and are often sold loose and unrefrigerated. They will develop a stronger and more complex flavour once exposed to air, in my experience, and that happens faster at room temperature. There's no risk to leaving a jar overnight in a cool room.

Olives come from a Mediterranean region where the temperature is regularly above 60F and eaten without refrigeration so I’d say fine to eat.

I've done this exact thing with those exact olives and have been eating them for a couple months since then with no ill effects. Also, my house would have been around 80 all night.
