Bring them breakfast muffin recipes (aka when your baby is a lark)

Now that kiddo had been waking up at 4 a.m. for the past week (hi jetlag), occured to me that I might as well use the time to make lemonade out of a lemony situation and bake! and be less of a sourpuss myself. So, hit me up with your favorite breakfast muffin/cookie/crumpet/othersuchthing recipes.

Sweet or savory are both ok (we're vegetarian). Low sugar is awesome, but I'm open to a pretty broad range of baked stuff that is somewhat quick to throw in the oven while a baby is rolling around the floor. thanks in advance!

Oh, you definitely want to be making scones! Somehow can’t link on my phone right now, but I like Mary Berry’s recipe. Can be sweet or savory, use whatever dried fruit, cheese, fresh fruit, etc that you have in hand. Or just plain with jam, butter, etc. And if you don’t want to or don’t have time to roll out and cut the dough, just shape into a round and slice like a pizza. Mmm...

Orange cranberry muffins are my favorite. I freeze cranberries when they’re available in the fall so I can make them all year. They’re vegan, but my omnivore friends love them. I once replaced the nuts with chocolate chips because a friend is allergic, and now I don’t make them any other way.

Best answer: These oatmeal cups are super quick, so may not take too much of the edge off being awake at 4am, but they’re really basic and you can change them up a million ways. I use skim milk instead of almond and applesauce or mashed bananas instead of melted coconut, but it’s pretty forgiving.

If you like biscuits, James Beard's recipe for cream biscuits is a classic for a reason. I have never dipped them in a whole stick of butter--the cream in the dough will give you a decadent result without it.

Best answer: I started making muffins for an easy breakfast I could take on my car commute that would provide fiber, magnesium and potassium. I like Mark Bittman's Muffins, Infinite Ways recipe because it's flexible. I eat eggs, with no eggs, you'd need to bump up the baking powder. I don't eat dairy, so I substitute OJ or cider for the milk. I use whole wheat and add bran, 1/2 can pumpkin, walnuts, and apricots. I have made them with cornmeal and molasses, with honey, with cinammon or ginger, or pumpkin pie spice. Sometimes I make blueberry cornbread muffins, a combnation I quite like.

I have over 900 recipes just for brekky pinned to a series of sections on a Pinterest board. Several are vegetarian/vegan - might help with some inspiration?
