What to cook with a lot of homemade chicken broth?

I have about ten cups of homemade chicken broth and am looking for something a little out of the ordinary to make with it.

I roasted a chicken and made a real yummy gelatinous broth with it. I usually make a chicken and dumplings type dish with broth when I have it but am just feeling not interested in that today. Looking for something a little different to make with it.

No dietary restrictions but this will be served to a five year old who dislikes spicy or strong salty flavors. I’m a competent home cook with some time on my hands. No instant pot or slow cooker.

Rice is really damned good substituting chicken broth for the water.

Yeah, we'll often use broth as a base for making couscous, quinoa, other grains like that.

Not sure what is ordinary for you, so apologies if this is old hat. I'm making a pot of Beans & Greens/Hoppin'John for dinner tonight; I like to use the extra-awesomeness of homemade stock to support simple dishes. This can be simply and deliciously prepared using just a few ingredients, but I often get carried away and make it fairly complex anyway.

There are zillions of variants, but my combinatorial version is:
-beans (black-eyed pea, pinto, black)
-greens (collard, mustard, kale)
-grain (brown/white rice, barley, millet)
-random left over or desirable flavor veggie (onion, celery, carrot)
-extra protein if desired (TVP, ground meat, egg, chicken shreds)
-extra fat if desired (butter, canola, bacon fat)

Pick your favorite in each category (or use them all!), adjust ratios to taste, keeping in mind greens will cook down a lot. I bring stock to low boil then add ingredients in order of decreasing cooking time, and simmer until done. Usually takes at least 90 min for dry beans, I shoot to serve it as a wet stew consistency. Salt to taste near end, serve with black pepper, paprika, hot sauce, dash of vinegar if desired.

Jambalaya and paella are traditionally somewhat spicy, but as a non-spicy/salty eater myself, I've made/had delicious mild versions of both.

Whenever I have chicken broth I use it for cooking a huge batch of beans (which I then freeze in 1-cup-portions). The recipe I use is for the instant pot so no good for you, but it‘s very simple, black beans, onion powder, bay leaves, epazote (if you have any), fill up with broth (add water if necessary), cook until beans are soft, drain a little bit of the fluid (but make sure there‘s still enough to cover the beans). You can use the beans for a side dish, serve over rice, add to chili, use for tacos, etc. They are not ‚special‘ as such but taste noticeably better than water-cooked beans and the liquid becomes very velvety and ‚saucy‘. Yum!

(Just make sure not to serve those beans to vegetarians!)

I made this the other day and it was a delight. Good chicken broth is the star, and the chicken “tofu” was fun to make. The silky mouthfeel was like an airy custard. I had it plain and spicy and enjoyed the plain more. Added a drizzle of soy sauce for more flavor.

Risotto with homemade stock is delicious and hard to screw up.

I often freeze chicken stock so that the next time I have leftover chicken, I can make chicken pot pie. Chicken, vegetables(carrots, mushrooms, onions, a few potatoes, add peas at the end) cooked in chicken broth and some wine and the broth reduced a bit. Put cooked veg, broth and chicken in a casserole dish, cover with puff pastry(frozen), bake. The pastry will thicken the broth making gravy.

If I am sick, I crave reduced chicken broth, noodles, butter and poppy seeds. I have these things, so maybe I will have some for dinner.

Any old paella recipe (you don’t strictly need a paella although it’s fun to have one) will really show off a good stock!

If you get sick of doing stuff with your stock you can also just boil it down into a glace assuming it’s not already salted. If it’s already salted it would be too salty as a glace.

One of my favorite things to do with great broth is make Garlic Soup! Be prepared for garlic to come out of your pores for the next few days...

2 heads roasted garlic
1 head fresh garlic
One medium onion
2 cups broth
One can coconut cream
Juice from half a lemon

Saute onions and garlic low, add roasted garlic, broth and coconut cream. Simmer until the house smells like a vampire's nightmare. Strain or blend, add lemon juice. Serve with super crusty bread for dipping.

Worth noting that it freezes beautifully. I freeze in one-pint containers left over from delivery, which is a super convenient amount for meal prep.

I freeze mine in ice cube trays, and store the cubes in a plastic container. Easy peasy to remove just as many or as few as you need for a recipe or for a nice, comforting mug of soup.

I love the way a good chicken broth/stock really pops in congee/jook. Some examples: Korean, Thai (use your chicken broth instead of the pork stock), Cantonese quick version (use your broth instead of the water and chicken powder).

Nth the recommendation for Avgolemono. I also freeze mine and ice cube trays are great.

Red lentil soup with really good chicken broth is really easy and a great comfort food. I use the linked recipe with chicken broth instead of water and add a dash of white wine, as well as a diced Yukon Gold potato. You can also add chicken sausage or smoked turkey, if you'd like to make it a bit heartier, or 2-3 rashers of diced bacon.
