Where to stay/visit in southern Vietnam on a two week adventure?

I'm traveling to Vietnam in mid November for two weeks with my partner, and am having trouble nailing down spots to visit/stay. We've settled on visiting Phu Quoc, but would love any/all suggestions. If you've traveled around southern Vietnam, what was a must see/do for you?
As we're visiting Vietnam in November, we're focusing our stay on the south of the country (for weather reasons). We're flying in/out of HCMC.
We would love to stay in at least one beachy spot, but in general are averse to super-fancy resorts. Specific recommendations of smaller towns, beach bungalow spots, boat adventures, snorkel spots, etc. are greatly appreciated.

Nha Trang is really pretty - but has gotten significantly more touristy over the last 10 years.

I guess Hoi An would be considered central, not south. My favorite parts of Vietnam were that, Hue, and the tombs of the emperors. I did go to the beach near Hoi An but it wasn't anywhere near as nice as the beaches at Nha Trang (which are very touristy).
I did an island cruise from Nha Trang and went swimming at a really lovely beach while others did tour activities -- I think there was an ostrich farm or something.
