Things to do in Rhodes (ideally including dancing)

We are going to Rhodes for a week in June. What should we do and see? We are enthusiastic ballroom and Latin dancers, so we would be especially delighted if we could find somewhere where we could engage in a bit of partner dancing. Any particularly lovely spots for swimming would also be wonderful. We would love to hear about a wide range of options, though.
