ISO NCL banana bread recipe

Looking for recipe for banana bread served on our recent Hawaiian cruise aboard the Norwegian Cruise Lines Pride of America.
I think this is the same banana bread served on the NCL Pearl and NCL Jewel. I've searched for the recipe and requested it from NCL, no luck. I figured that if anyone can help, you guys can.

Is it also possible that they were using bananas from Hawaii like apple bananas?

This is my go-to recipe for banana bread that comes out moist and tasty, except I add a tablespoon of cinnamon and a pinch of nutmeg, plus one cup total of walnuts and chocolate chips (more chips than nuts). I'm sorry this likely isn't the cruise ship recipe you are seeking, but I figured I'd post it here on the off chance.
FWIW, I've found that recipes using sour cream (or maybe also creme fraiche) to come out more moist than those without.

I don't know your recipe, sorry, but I will share that if you are looking for a very moist soft banana bread, use a recipe that uses oil for at least half its fat. Oil is not tasty as butter, this is true, but it really does impart a better texture to quickbreads.
You know to use squishy overripe bananas right?

Response by poster: My mother used to add sour cream to her banana bread, and it was very moist, so I think that's the secret ingredient in the NCL recipe as well. Sadly, I don't have my mother's recipe, but I'm willing try as many recipes as possible necessary until I get the right one.
