Looking for reading list suggestions for automatic topic/concept matching

Looking for reading list suggestions and search terms for fuzzy concept matching: given a list of topics, some of which might be defined by synonyms, how do you match to more exact concepts? I'm guessing that this is a natural language processing (NLP) or semantic web question but I might be wrong.
The use case for this is in an online matching application, where people put information in about themselves, and get matched to suitable positions (other people, hobbies, jobs, whatever). So if the site were a dating site, and one person put that they really loved cheddar, and another that they rather liked cheese, how would you infer that these are similar? References, keywords, further reading, all gratefully received.
